A Twist On Kisses

As we get closer (and closer, omg!) to the Christmas weekend ahead, we’ve been going over our to-dos, checking them twice, and realizing we hadn’t made one, small attempt at cookie cheer. While I’m fine drinking my nights away to a cup of hot buttered rum (a recipe passed down from my mom-in-law; hi, Ann!), Scott’s grumbling belly ached for something a bit more sinful – if that’s possible. I promised him his favorite PB-Kiss cookies, but never one to leave well enough alone, I spruced it up with a Frankenstein of recipes, resulting in  (extra) peanut-buttery, oat-y goodness.

Oatmeal PB Kiss Cookies

1 cup chilled sweet cream butter
1 cup packed brown sugar
1 1/2 cups peanut butter
1 tsp. vanilla extract
2 eggs
1 3/4 cups all-purpose flour
2 tsp. baking soda
dash of salt
1 3/4 cups quick-cooking oats
48+ Hershey Kisses (1 regular bag)

Preheat the oven to 350F. Combine the butter, brown and granulated sugars, vanilla extract and peanut butter until smooth. Beat in the eggs one at a time until well blended. Combine the flour, baking soda and salt, then stir into creamed mixture. Mix in the oats until combined. Shape dough into 1″ balls, place on ungreased cookie sheet and bake for 9-10 minutes. Remove from oven, and press an unwrapped Kiss into each cookie. Cool completely. Makes 4-5 dozen.

A warning (if any), is that they don’t come out as, um, bulbous as a traditional Kisses cookie, but they’re still thick, chewy, and really, really yummy. And, of course, oat-y (without those pesky raisins hanging around)! Squashing your chocolates on the warm cookies still create that crackling effect, but seemingly not as much, as they’re already a bit lump-tastic from the oats. And I mean that in the best possible way.

I also used reduced fat peanut butter and debated adding a sprinkle of cinnamon to the pre-cooked cookie bowl but thought it may have been a bit over the top for Scott’s more traditional craving. Thoughts?
